Spice alchemy is a powerful combination of belief, spirit, and substance. A sprinkle of this and a hint of that can completely transform something ordinary into something extraordinary. Imagine mulled cider without cinnamon or eggnog without nutmeg. What about molasses cookies without ginger and cloves or potatoes without cracked black pepper? Not to mention Indian curries without turmeric, coriander, and cardamom; Mexican food without cumin and chili powder; or Italian sausage without fennel and dried herbs. Nearly everything we eat has some form of herbs and spices in it, from the salt and pepper that’s sprinkled over a simple steak to the more exotic combinations used in soups, stocks, and curries.
